This traditional Kerala pickle brings together the punch of fresh ginger, the tang of tamarind, and the sweetness of jaggery – creating that perfect balance on your banana leaf sadya.

In this article, I’ll share my step-by-step recipe for Inji Curry (Kerala Style) using fresh ingredients, along with tips and product suggestions you can grab online if you don’t have access to traditional Kerala spices.

🌿 Ingredients for Inji Curry (Traditional Style)

Here’s what you need to prepare this authentic Kerala Onam dish:

 

🍳 Preparation Method (Step by Step)

1. Prepare the Ginger

  • Cut fresh ginger into small pieces and pat dry.

  • Fry in hot oil until golden brown and aromatic.

  • Set aside — this gives the curry its authentic flavor base.

2. Prepare the Shallots

  • In the same pan, heat a little oil.

  • Add chopped shallots and green chili.

  • Sauté until the shallots turn golden brown.

  • Remove and set aside for cooling.

3. Prepare the Coconut

  • Add chopped coconut pieces to the pan.

  • Fry until lightly roasted for a nutty flavor.

  • Set aside for cooling.

4. Coconut Tempering – Spice It Up

  • Add grated coconut to the pan and fry until lightly roasted.

  • Toss in curry leaves and one shallot (as shown in the video).

  • Mix in turmeric powder, chili powder, coriander powder, and fenugreek powder.

  • Fry gently without burning the spices.

  • Set aside for cooling.

5. Grind Mixtures

  • Once cooled, grind the fried ginger into a fine powder and keep aside.

  • Grind the spiced coconut mix into a smooth paste with a little water.

6. Final Preparation

  • In a pan, add the spiced coconut paste and heat gently.

  • Mix in the roasted shallots and chopped coconut pieces.

  • Add roasted powdered ginger.

  • Stir well and cook on low heat for about 5 minutes.

7. Tamarind & Jaggery Magic

  • Add soaked tamarind pulp to the pan and stir well.

  • Mix in jaggery to balance the tangy flavor.

  • Adjust salt as needed.

  • Add half a cup of boiled water to bring the curry to a semi-liquid consistency.

8. Simmer to Perfection

  • Let the curry simmer on a low flame for 10 minutes.

  • Cook until it thickens slightly and all flavors blend beautifully.
